chocolate fudge cake

3 cups all purpose flour
2 cups white sugar
1/2 cup cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons pure vanilla extract
2 tablespoons white vinegar
3/4 cup canola oil
2 cups strong brewed coffee

Preheat the oven to 350ºF (175ºC). Prepare three 6 inch cake pans by coating the sides of the pans with non-stick cooking spray and place a parchment circle in the bottom of the pans.
Sift all of the dry ingredients together into the bowl of a heavy duty mixer. Place mixer on low speed to combine.
Combine all of the wet ingredients together into a separate bowl and gradually add to the dry ingredients with the mixer on low speed. Scrape down sides of bowl once. Mix until combined. Divide batter evenly between the prepared cake pans.
Bake cakes in a 350ºF (175ºC) oven for 30 - 40 minutes or until done. When cake is ready it should be slightly domed in the center and spring back when gently pressed. The sides of the cake will begin to pull from the sides of the pans and a tooth pick inserted in the center will come out clean.
Place cakes on a cooling rack and allow them to come to room temperature before removing them from the pans and frosting the layers.
